🌟 A bold and sun-soaked red from the rugged hills of Minervois—rich, spiced, and deeply Mediterranean.

👁 In the Glass:
Deep ruby with garnet reflections—concentrated and expressive.

👃 On the Nose:
Aromatic and inviting with ripe black cherry, blackberry, and plum. Accents of garrigue herbs, black pepper, and sweet spice mingle with hints of cedar and wild thyme.

👅 On the Palate:
Full-bodied and smooth with generous dark fruit, savoury spice, and fine, polished tannins. The warmth of the Languedoc sun is balanced by fresh acidity and a long, velvety finish laced with notes of liquorice and rosemary.

🍽 Food Pairing:
Perfect with grilled meats, cassoulet, lamb with herbs, or roasted vegetables. A natural partner for rustic French fare and Mediterranean-inspired dishes.

⏳ Ageing Potential:
Delicious now, especially with a short decant, but can age gracefully for 5–7 years, developing greater complexity and savoury depth.

✨ Why You’ll Love It:
‘Caïssa’ is a powerful yet elegant Minervois red—crafted with care and rooted in the wild, stony terroir of the Languedoc. It’s a wine that brings together character, complexity, and a true taste of southern France in every glass.
