Charles and Mireille Greuzard moved from Burgundy to the Languedoc, “the new Eldorado” of wine in the 80’s. In 2001 they bought Domaine de L’ Herbe Sainte, the focus of their attentions ever since. Their daughter Christelle now plays an important role.
The reds of Chateau/Domaine de L’Herbe Sainte have a very full rich fruity style derived from ripe grapes and a determination to keep as much flavour as possible. Minimal filtering means that some wines leave a deposit.
The name Chateau can only be used for Appellation (Minervois) wines. The IGP wines use the Domaine name.
Vinification
Merlot, Cabernet Sauvignon and Syrah are three grape varieties planted on the more or less gravelly soils of the property.
On these single-varietals, we seek the expression of the typicity of each grape, of the fruit, the freshness and the complexity ; just by the richness of the grape harvest and the quality of the terroirs.
Tasting Notes
The Syrah expresses itself with bright blackcurrant aromas backed up with spices including black pepper and cinnamon with a floral hint of violet.
This is a great wine just to sit back and enjoy by itself or try pairing it with ribs or middle eastern foods.
