🌟 A textbook Chablis—crisp, steely, and impeccably pure, capturing the cool-climate intensity of northern Burgundy’s Kimmeridgian soils.

👁 In the Glass:
Pale green-tinged straw—luminous and restrained.

👃 On the Nose:
Pronounced aromas of green apple, lemon zest, and white flowers, underpinned by wet stone, flint, and a hint of sea breeze minerality.

👅 On the Palate:
Lean and precise, with vibrant citrus and tart orchard fruit framed by racy acidity. A pronounced mineral streak—chalky and saline—drives through to a long, bone-dry finish. The texture is sleek, almost tensile, with an echo of steely flint on the aftertaste.

🍽 Food Pairing:
Ideal with oysters, raw scallops, sushi, or lightly dressed green salads. Also superb alongside goat cheese, shellfish bisque, or simply as a crisp apéritif.

⏳ Ageing Potential:
Delicious now for its freshness and clarity; will develop subtle honeyed and nutty nuances over 3–5 years.

✨ Why You’ll Love It:
Domaine Billaud-Simon Chablis is the essence of pure Chardonnay craftsmanship—no oak, no compromise, just terroir. It delivers razor-sharp precision, electric minerality, and classy restraint, making it a benchmark for lovers of steely, elegant white Burgundy.
