Tasting Note: It can be sipped chilled after dinner on its own, perhaps with a few strawberries or slices of peach or roasted pineapple or a fine fruit tart (apple or apricot). It’s also delicious with pate, scallops, duck with mango, vegetables with a confit of fennel and sweet potatoes, as well as blue cheese such as roquefort or beenleigh blue, and epoisses, when not too runny.
