Iris is a distinct, spontaneously fermented beer that follows its own unique recipe and process, differing from both classic lambic and gueuze styles due to its malt bill, hopping regimen, and refermentation method.
The result of combining two tastes that were very present in Cantillon beers until the middle of the 20th century: acidity from spontaneous fermentation and bitterness from the use of fresh hops, followed by cold hopping. Made exclusively from Pale Ale malt
