Vinification takes place in stainless steel using selected yeasts. The fermentation temperature is around 26°C. Frequent pumping over and delestage are performed throughout the maceration period, which lasts approximately two weeks. At the end of alcoholic fermentation, the wine is immediately transferred to second- and third-use French oak barriques for malolactic fermentation and aged for approximately one year.
Tasting Note: With a deep ruby red color, this wine boasts a complex aromatic profile ranging from sour cherry to delicate notes of forest undergrowth. Medium bodied and well-balanced, it features a distinctive, lively acidity that makes it an excellent pairing for rich, fatty meats. Aged in second- and third-use barriques.
