The 2021 Merlot Reserve is an elegant, full-bodied Merlot showcasing black cherry, wild fig and soft mocha nuances, with plush tannins and a velvet finish that’s ideal for lovers of refined Merlot.
Holden Manz’s vines benefit from a cool Franschhoek climate and varied soils. The hand-selected fruit underwent berry sorting and 27 days of wild-yeast fermentation in stainless steel, followed by 22 months in French oak (70% new).
This Merlot Reserve is distinguished by its 100% wild?yeast vinification and meticulous berry selection, yielding a refined, ageworthy wine that develops over 7–10 years. Rich, balanced, deep and dark, and wonderfully finessed.
Pairing Suggestions: Rack of spring lamb with baby potatoes and peas, or aged Comté with sourdough toast.
Tasting Note: Dark garnet with red rim. Aromas of black cherry, blackberry, cedar and fynbos. Full-bodied with plum and mocha mid-palate and a long, velvety finish.
