This 2017 Vintage Brut Nature is the purest expression of Mudita’s philosophy: no added sulphur, and 84 months on the lees. Crafted from 74% Pinot Noir and 26% Chardonnay, it’s a rare Cap Classique that speaks fluently of time and terroir.
Elegance and complexity are evident from the first pour, with delicate notes of buttered brioche, wild strawberries, green apple and a savoury hint of white chocolate. This is a sparkling wine for the patient, aged over seven years to allow depth, richness and clarity to emerge naturally.
Winemaking: The wine spent 84 months on lees before disgorgement, with low dosage and no added sulphur. Naturally fermented and bottle-aged using Méthode Cap Classique.
Pairing Suggestions: Ideal with oysters, sashimi, grilled cauliflower steak, or parmesan crisps. A beautiful match for seafood, salty snacks and refined vegetarian plates.
Tasting Note: Pale straw with a fine mousse, the palate shows macadamia, honey nougat and spiced baked apple, finishing long with green fruit and white chocolate.
