Jose, a young man in the first flushes of his wine making career is charming, considered, thorough and above all in possession of wit and skill – all perfect ingredients to make the perfect wine.
Unculin is his ‘drinking’ red made from 80 year old vine Mencia high up in the Bierzo region (North-West Spain). The grapes are grown without the use of chemicals, fermented in whole bunches and are unfined and unfiltered.
