Only the best grapes of the best vintages are destined for this wine; the drying time of the grapes is extended to 150 days, before they are gently pinched and fermented in open tonneau for about 2 months. A soft pressing is made and then the wine is placed in new tonneau where it matures for 2 years.
After bottling, the wine refines in the bottle for a further year.
