Scilly Spirit Distillery – Island Gin

Artisan Gin from Our Bottle Shop and Taproom:

NOSE

A lovely balance of piney juniper, piquancy of cardamom, with a hint of orange, then herbal lime leaf and warm familiar notes of cassia. PALATE Full and rounded in the mouth, with soft citrus and juniper on the fore, followed by layers of fennel, a fruity peppery note and subtle spice. The savoury tones of the pepper and cardamom are balanced by a touch of sweetness from the orange, fennel and cassia.

FINISH

A delicious rounded gin which fills the palate. Once the juniper and citrus notes fade, the spice, pepper and cardamom remain, with a warm, sweet close from the cassia. We elected not to include coriander for our gin (unlike the majority of gin makers), as we feel the kaffir lime leaf delivers the subtle citrus notes on the finish.
