In the past quarter-century, the cultivation of the white grape variety Assyrtiko has expanded from its native Santorini, to the Greek mainland and Crete. This variety is renowned for its ability to thrive in hot, arid climates, making the region of Crete an ideal location.
Tasting Note: This pale yellow wine presents bright citrus aromas and herbal essences of thyme and oregano, along with a refreshingly crisp acidity. The three-month lees aging process provides an increased depth and complexity of texture, culminating in a lengthy minerality-infused finish.
Origin: Crete, Greece
