The local wines represent the strictest hand selection during the harvest and grow in the top limestone locations in Saulheim. Yields are at a very low level of around 40 to 55 hl/ha.
The grapes were harvested by hand with an optimal ratio of aroma, acidity and ripeness. The time of harvest is particularly crucial for Pinot Noir.
This extract-rich Pinot Noir, fermented spontaneously on the mash over 20 days, was stored for almost 2 years in high-quality French barrels (1/3 new and 2/3 older).
“Plenty of candied redcurrants and strawberries on this one, as well as orange and lemon tart. The full-bodied palate has real depth and chewy-tannin detail, which makes this a structured pinot noir that will need a few years to soften. Long but elegant on the finish.” – 95 Points, JamesSuckling.com
